Stewing and Casseroling

Choose lean diced beef, diced lamb, gigot chops, round steak. Preheat oven to 150°C/300°F, gas mark 2. Brown meat in a frying pan with a little butter. Add the vegetables, fry for a minute or two and transfer to a casserole dish. Season with salt and pepper. Read more »

Roasting Beef

Choose topside, rib roast, sirloin or sirloin on the bone. Pre-heat the oven to 240°C, 475°F, gas mark 9. Season the meat with salt and pepper. Roast for 20 minutes, then reduce the temperature to 180°C/350°F, gas mark 4, and continue to roast – basting at least three times. Read more »
