Choose lean diced beef, diced lamb, gigot chops, round steak. Preheat oven to 150°C/300°F, gas mark 2. Brown meat in a frying pan with a little butter. Add the vegetables, fry for a minute or two and transfer to a casserole dish. Season with salt and pepper. Cover tightly and simmer gently in the oven at 150°C/ 300°F, gas mark 2 for one and a half hours or until very tender.
