Roasting Chicken

Pre-heat the oven to 220°C, 425°F, gas mark 7. Place the chicken in the roasting tin and smear softened butter all over the chicken with your hands. Season the chicken all over with salt and pepper.

Reduce the temperature to 180°C, 350°F, gas mark 4 and roast for 20 minutes per lb (450g) plus 10-20 minutes extra. Baste three times during the cooking. For the final 15 minutes of cooking, increase the heat to 220°C, 425°F, gas mark 7 to give the skin that final golden crispiness. When it is cooked, remove it from the oven and cover it with foil. Leave to rest for 20 minutes before serving.
