To cook the perfect ham..
Place the ham, peppercorns and a bayleaf in a large saucepan. Place a lid on the pan, bring to the boil and drain.
Cover with fresh cold water. Bring to the boil and then reduce the heat and simmer for 20 minutes per Ib (450g) plus 20 minutes more. When the ham is cooked, the skin will peel off easily. Remove the joint from the saucepan and place on a roasting tin. Using a sharp knife remove all skin and score the fat into diamonds. Spread it with a mixure of mustard, honey, orange rind and sugar. Bake the ham at 200ºC, 400ºF, Gas Mark 6 for about 30 minutes until golden brown.
Boiling traditional bacon and cabbage
Place the bacon in a large saucepan and cover with cold water. Place lid on saucepan, bring to boil and drain. Cover with fresh cold water.
Bring to boil and then simmer for 20 minutes per 1lb (450g) plus 25 minutes over. Remove outer leaves of cabbage, cut in half add to the saucepan and simmer for the last 20 minutes.
Remove bacon to choppping board and allow to stand for 10 minutes. Carve into thin slices.
Drain cabbage, season with salt and pepper, chop and add a knob of butter. Serve the bacon with cabbage, boiled potatoes and parsley sauce. Mustard is optional.

Always preheat the oven (220°C, 425°F, Gas Mark 7) for 10-15 minutes before placing products in the oven..
Grilling & frying
Season the meat with salt and pepper before cooking. Remember the timings relate to the thickness of the meat -thicker cuts will need an extra 1-2 minutes each side.
